I love cooking in one dish especially in cast iron.  Cast iron adds a flavor like no other cookware can. Plus you can transfer this southwest chicken recipe from stove top to oven.

Southwest Chicken & Rice Skillet


  • 1 tbsp olive oil
  • 1 large chicken breast
  • 1/2 chopped onion
  • 2 tbsp taco seasoning
  • 2 c chicken broth
  • 1 can black beans
  • 1 c frozen corn
  • 1 c salsa
  • 1 c rice
  • Optional Toppings:  cheese, sour cream, lettuce

Directions:  Cut chicken into small pieces.   Pour olive oil into skillet and heat.  Saute chicken,  onion and taco seasoning.  Add remaining ingredients and bring to a boil.  Turn heat to medium-low and simmer for 15 minutes.  Let sit for 5 minutes before serving.  Serve in hard or soft shells with optional toppings or use as a dip for nachos.
