We have an abundance of eggs on the homestead so I’m always looking for good egg recipes. I love one skillet cooking so this hash brown breakfast recipe is a favorite on our homestead.
20 oz frozen hash browns
1 bell pepper
1 tsp parsley
2 tbsp coconut oil
8 oz shredded cheddar cheese
Salt & pepper to taste
Directions: Heat coconut oil over medium high heat. Add hash browns, bell pepper, onion, and parsley. Cook until golden brown (about 10 min).
Top with cheese then eggs. Bake at 350 until egg whites set. About 15 min. I use cast iron for this dish because I can transfer it from stove top to oven.
