Green Tomato Jam Recipe
4 lbs green tomatoes (roughly pureed)
2 lbs organic cane sugar
5 drops lemon essential oil (Get wholesale prices here)
1/2 cup lemon juice
2 inch cinnamon stick
Quarter tomatoes and layer in a pot sprinkling sugar on each layer. Let it rest overnight to draw out juices.
The next day place all ingredients in a pot and bring to a boil. When temperature gets to 212 remove the cinnamon. Cook down until it thickens, stirring often. Can take an hour depends on your heat and size of pot.
Place jam in sterilized, hot jars with a 1″ head space. Bath can for 10 min with 1-2″ of water covering jars.
Some ideas on using your jam:
1- Add green tomato jam with cream cheese to a cracker like in the picture.
2- mix green tomato jam with mayo or sour cream as a dip
3- mix 1/4 cup green tomato jam to 1 lb hamburger meat before cooking.
4- try green tomato jam on a biscuit or bagel.
Its not quite sweet but savory!
